I've got a summer internship within Audit at a Big 4 firm. However my goal is to get into IB - M&A. Is this internship enough to be considered for an IB grad program. Or is it better to apply for the CBA/ANZ/Westpac internships.

An internships in the institutional side of a commercial bank could be more relevant for an investment banking career. However they're both great experiences.

An Economics degree will be useful especially if you are keen to be part of the Research divisions of Investment Banks. Each IB has their own research wow gold vteams to formulate strategies based on macroeconomic trends. Having said that, you may wow po consider working in economic research houses to gain some experience and then move into IB research team.
